i have heard sea bass are really good eating how about croakers? will i catch some sea trout never caught one.

Sea Bass are too, white meat fish.
Sea Trout & Specs (speckled sea trout) are hit & miss down there right now, as are red drum.
Trout I usually did better in the fall from shore and backwater areas are better than the inlet.
