Jesse's SteakHouse's Salmon Carbonara

Stopped into Jesse's Steakhouse in Lebanon NH with the wife a couple of weeks ago. Theresa had the Salmon Carbonera.. It was SO good we asked for and got the chef's recipe... It took a couple of weeks of pleading, but he finally came thru for us... It is the BEST salmon/pasta recipe we have ever had, and it is very simple...
Bacon ( 8 peices +) Lots of grease
Salmon (about a 8 ounces) fresh or frozen
Red Pepper (half Pepper)
spinach ( half package )
Cream ( about 1 cup) eye ball it not to watery. Cheese will absorb some of the cream.
Parm cheese (grated about 1 cup
Cooked pasta ( about 3 cups)
Start with bacon cook it up until it is crispy take it out of pan. Cook the salmon in the in the grease till there is a crispy skin.
In a separate pan cook the red peppers in Olive oil basically blanching them. Throw in spinach till cooked. chop up bacon.
Mix all ingredients in the pan with the bacon grease. Mix in the pasta and the cream bring to a boil on the stove to mix in parm cheese until nice and creamy. top with grated parm.
You will have to eyeball the dish when it looks creamy.
