medium onion, chopped

small red bell pepper, seeded & chopped

teaspoon oregano

12 oz. cans black beans, undrained

jar salsa
1
teaspoon Chipotle pepper, to taste

cup sour cream
2
tablespoons fresh cilantro, chopped
Instructions
Cook bacon, drain on paper towel and coarsely chop. Cook onion and bell pepper in 1 tablespoon of fat until soft. Add cumin and oregano, cook 1 minute. add bean with their liquid and the salsa. Simmer until thickened. Blend 1 cup of the bean mixture until smooth and mix with the remaining bean mix. Season with salt and pepper. cover and refrigerate 2 hrs. Just before serving stir in half of the crisp bacon, top with sour cream and top with cilantro and remaining bacon. Serve with corn chips.
